You cannot fully turn off Google AI Overviews: there is no setting for it. What you can do: use the Web filter per search, make your browser search through a custom search URL with the parameter udm=14, or simply ignore AI Mode (which is a separate tab). Can I disable AI Overviews completely?
No. AI Overviews are part of the regular search results and Google offers no toggle to switch them off, not even when you are signed in. What you can control is how you search: there are three ways to get results without the AI summary.
Option 1: the Web filter (per search)
Above the search results sits a row of filters: All, Images, News, and so on. Click "Web" (sometimes hidden under "More") and you get the classic list of blue links, without the AI Overview and without other blocks. This works per search and is the quickest route when you occasionally want the classic view.
Option 2: search without AI by default (udm=14)
The Web filter has its own URL parameter: udm=14. Add a custom search engine in your browser with the URL https://www.google.com/search?q=%s&udm=14 and set it as your default. Every search from your address bar then opens directly in the classic view. This is the structural solution for anyone who never wants to see AI Overviews; setting it up takes two minutes and works in Chrome, Firefox and Edge.
What about AI Mode?
AI Mode is different from AI Overviews: it is a separate tab next to the regular results that you have to open yourself. So there is nothing to turn off; not clicking it is enough.
